Shrimp and aguachile in Mazatlán
Mazatlán is Mexico's premier shrimp port and the birthplace of coastal culinary legends like tacos gobernador and fiery chiltepin aguachile. Here, seafood is caught at dawn and cured in fresh lime by lunchtime. Here is your insider guide to savoring authentic Sinaloan coastal flavors.
Four things worth knowing
Nothing complicated, but they change the experience quite a bit.
Eat it right away
The lime keeps cooking the shrimp
The shrimp should look translucent and bite firm. If it arrives chalky white and rubbery, it sat too long in the lime.
The chile here is chiltepin
Not jalapeño, not chile de árbol
It grows wild in the Sinaloa hills. The heat hits hard and fades fast, so it does not linger through the whole meal.
Go early to the carts
They sell out by mid-afternoon
The catch arrives from the boats around 7:00 and runs out near 15:00. After that it is not the same.
What to drink with it
Cold Pacifico or barley water
A frosted Pacifico or cold barley water. Either one cuts the heat.
Which aguachile to order
There are three versions and they differ a lot. If you are not big on heat, start with the green one.
Green aguachile
🔥 Medium heat · fresh chiltepin and serranoThe one people order most. Shrimp butterflied and cured on the spot with lime, salt, cucumber and red onion.

Before you go
- 1Look for high local turnout: the freshest seafood spots sell out their daily catch before 5:00 PM.
- 2True Sinaloan aguachile is cured on the spot; shrimp should remain firm, translucent, and fresh.
- 3Always pair with crispy local corn tostadas and authentic crushed chiltepin hot sauce.
- 4Ask for chili 'por separado' (on the side) if you are sensitive to authentic Mexican spice levels.
